Hi James, I would not recommend #2 shot for turkey hunting, especially steel shot. Steel is much lighter than lead and lacks lead shot’s killing power and range. I would opt for lead shot or tungsten, nothing larger than #5 (so, 5-6-7-8-9) Tungsten is much denser and heavier than lead—a #7 tungsten pellet weighs more than a much larger #5 lead pellet.
A standard 2 ¾-inch or 3-inch magnum tungsten load is more than enough for killing turkeys out past 50 yards. Additionally, the advantages of tungsten shells make 20-gauge shotguns indisputably effective turkey killers, although tungsten loads will cost a bit more than lead.
